John’s great guacamole

John Torode's guacamole makes the perfect accompaniment to burgers, nachos, or is great just on its own as a dip

Method

  1. Peel and stone avocados and put in a bowl. Mash using a fork until fairly smooth, but with a little texture. In a small bowl, mix together lemon juice, Tabasco sauce, chilli, coriander, onion, olive oil and salt. Fold this through the avocado. Make it just before serving and don't put it in the fridge.

    Lovely to have a guacamole recipe without tomatoes which I find go soft and lose their flavour very quickly. I soaked the red onion in the lemon juice whilst I prepared the other ingredients (as suggested in another Good Food recipe) which mellows it somewhat.

    This was delicious. I also soaked the onion with the lemon juice like Jill B, which brought the flavours together nicely. Loved the addition of tabasco sauce.

    try this recipe with much less lemon juice and mash up onions, coriander and chili with a little salt...before mixing to the mashed avocadoes...
