Method

  1. Line a small to medium sized square baking tray with baking paper.
  2. Place biscuits into a freezer bag and bash with a rolling pin or just the side of your fist until they're broken into a mixture of everything between dust and 50p size lumps. Put this to one side.
  3. In a large sauce pan melt the butter, chocolate and golden syrup over a gentle heat stiring it constantly until there are no or almost no more lumps of chocolate visible, then remove from the heat.
  4. Take Biscuits, marshmallows and any additional delicious ingredients and pour into the pan of the chocolate mixture. Stir all this into the mixture until everything is completely covered.
  5. Tip the mixture into the lined baking tray, making sure you get it all, and spread the mixture out to the corners.
  6. Refrigerate this for at least 2 hours then dust with icing sugar and cut into fingers of sizes you deem necessary.

    Ok, these are so yummy..... as I didn't have many marshmallows I used milky ways, I just cut them up and threw them in, nice and gooey, also I used chocolate digestives, dried raisins and cherries and walnuts, very rich, so I've cut them into small squares, meant to be taking them to work tomorrow but not sure if they'll last till then!!!!

    I always replace about 30% of the crumbled rich tea biscuits with crushed oreos and it has been going down a treat with everyone I know for the past 2 years since I first found this recipe. I sometimes add chopped chocolate fingers too :)

    I replaced 50g of digestives with 50g of Amaratti biscuits, simply because I am addicted to them, and it worked really well. Don't think I'll be sharing much of this, they'll have to fight me for it!

    By way of accident and lack of planning I made a few changes. 100g dark chocolate, 100g milk chocolate with hazelnuts. I used butterscotch sauce instead of golden syrup but 2spoons instead of three. Threw in a few cherries and some maltesers too. Was short for time and put it in the freezer for an hour. Delicious

    Try making without the marshmallow then when spread on tray press marshmallows, fudge or tablet(in small cubes) and maltesers on top. For Easter add mini eggs.

    Aftee two attempts, I still haven't got this recipe to work. After 5 hours in the fridge, it was still a very sticky mixture and therefore difficult to cut, and I only added 2 tbsp of golden syrup. A layer of solidified fat also accumulated on top, which makes me think the amount given is too much. The taste is fair, but the appearance is off-putting. I'll try Nigella's recipe next, as the ingredient quantities are different.

    I used this recipe as a base, but I used about 150g of dark chocolate and 150g of malteaser teaser bar chocolate. I also substituted digestive biscuits for shortbread and added Turkish delight chunks, raisins and macadamia nuts. I personally think this take on the rocky road is delicious so if you like the extras I've mentioned, give it a try! In the future I might try adding smashed up cadburys crunchie instead of the malteaser bar.

    Love this recipe. Made these with my 3 year old but used 100g milk choc and 100g dark. Added raisins and maltesers and these taste amazing!

  • 200g Dark Chocolate (70% cocoa solids works best)
  • 2-3 tbsp Golden Syrup
  • 135g Butter or Margarine
  • 100g Mini Marshmallows (chopped regular marshmallows work too)
  • 200g Digestive biscuits (rich tea can also be used)
  • Icing sugar to dust
  • Optional Ingredients
  • Raisins, dried cranberries or any dried fruit
  • Nuts
  • Anything else you think would be tasty
  • Please share any additional ingredients you included or things you did differently. Remember if using additional ingredients to change the amount of biscuit and marshmallow accordingly so as to have enough mixture to cover them.
