- Heat oven to 200C. Peel and cut red onions into wedges. Peel and chop garlic cloves. Slice red bell pepper. Put vegetables into ceramic dish and mix with oliven oil. Bake for 40 mins.
- Meanwhile whisk eggs in a bowl, gradually add buttermilk, flour, bake powder and carry on beating until the batter is completely without lump-free.
- Grate parmesan and chop parsly and spring onion. Tip grated parmesan, chopped parsley and spring onion into batter and stir until combined. Tip the batter into the ceramic dish with baked onions and combine. Bake for 35 mins.
