These delicate little cakes are just the thing for a summery afternoon tea treat

Method

  1. Heat the oven to 200C/fan 180C/gas 6. Fold the egg whites and butter into the dry ingredients, followed by the apricots. Spoon into 8 well-buttered friand or muffin tins. Sprinkle with almonds.
  2. Bake for 10-12 minutes. Allow to cool before serving.

When buying apricots, look for plump fruit with an orangey-gold colour that smell fragrant.

    Added extra apricot. I have to give this full marks as I forgot to put butter in and halfed the sugar but it still tasted good. Either good recipe or proof we put more sugar and fat in food than need be.

    Came across the recipe when looking for a way to use up egg whites! Cut sugar to 60g and butter to 70g and did not bother sieving the ingredients. Delicious! Might try with blueberries next time.

    I used dessicated coconut and blueberries and raspberries in non stick muffin tins. They were super tasty, will be making them again but doubling the recipe, you can,t stop at just one !!!

    Following others' suggestions, I used 50g butter, 60g icing sugar and didn't bother sieving the ground almonds. They were plenty sweet enough - apricots lovely - although they were smaller than I'd imagined. Used muffin tin and made 8. Is there a reason that tin has to greased as opposed to using muffin cases, which would've been quicker? Served with ice cream but didn't really need to.

    I love the sound of these but don't have fresh apricots. Do you think I could use dried apricots instead? I can't rate until I've tried the recipe.

Ingredients

  • 3 egg whites , whisked to soft peaks
  • 100g unsalted butter , melted and cooled
  • 125g icing sugar
  • 40g plain flour
  • 100g ground almonds , sifted together with the icing sugar and flour
  • 3 apricots , very ripe, stoned and diced (if you want some on top, as pictured, keep back a few pieces to add with the almonds)
  • 3 tbsp flaked almonds
