Smoked salmon & dill frittata

Try this imaginative way with eggs for a cheap and cheerful supper

Method

  1. Cook the potatoes in boiling salted water until very tender, then drain really well. While the potatoes are cooking, fry the onion in a knob of butter until really soft. Whisk the eggs with some seasoning then tip in the potatoes, onion, salmon and dill, and stir.
  2. Heat another knob of butter in a medium, non-stick frying pan. Pour in the egg mix and leave for a few minutes until the bottom has set. Slide under a grill to set the top then cut into wedges to serve.

    very yummy and easy, if you're not too fond of the taste of raw onion you might want to fry the onion a little bit before adding it to the egg mixture.

    Made this last night and didn't change a thing, it was the perfect way to use up some leftover smoked salmon. I just served it with green salad.

    Awesome! Made this but added a couple more potatoes to make it more substantial for "him indoors". Roasted some asparagus to have on the side. Lovely!

    made this tonight and it was delicious! ...although i admit i changed it slightly... used a bit more salmon that was called for, and added approx 1/4 grated courgette. found 6 eggs a lot between 2, so i downed it to 4, and put a wee sprinkling of pizza cheese on top for the last few minutes under the grill, and it came out fantastic. lovely and light and fluffy and packed full of flavour. served it with a salad of spinach leaves mixed with pesto, onion, cherry toms and cucumber. an easy, fast and tasty midweek meal.

    Very tasty - perfect for a picnic. I added asparagus (steamed for 5 mins first) to mine - went really well with the other flavours.
