Cheeseburger & chips

Homemade burgers and chips beat shop-bought every time. Why not make double and freeze a batch?

Method

  1. Tip the mince into a large bowl with the onion, breadcrumbs, cheese, parsley, Worcestershire sauce, egg, chilli powder, ½ tsp salt and some pepper. Mix together well with your hands, then divide the mixture into 10 and shape into burgers.
  2. Bring 2 large saucepans of water to the boil (or prepare the chips in batches if you don't have enough big pans). Add the chips, bring the water back to the boil and set your timer for 3 mins. After 3 mins, drain the potatoes well and tip onto one or two large kitchen-papercovered trays. Scatter with the flour and some seasoning and gently toss to coat.
  3. Freeze the burgers and chips (see freezing tips, below) or, to cook straight away, heat oven to 200C/180C fan/gas 6. In a baking tray, toss the chips in a little oil, then roast for 35-40 mins until crisp and golden. Meanwhile, heat a griddle pan, grill or barbecue until hot, then cook the burgers for about 5-8 mins on each side, or until cooked to your liking. Sandwich the burgers in toasted buns with salad and sauces, then serve with the chips.

Cooking from frozen

For best results, defrost the burgers overnight in the fridge, then cook as per the recipe. But if you forget, you can just cook everything from frozen. Heat oven to 200C/180C fan/gas 6 and spread the burgers and chips out on separate oven trays. Cook the chips as before until golden and crisp, shaking halfway, and the burgers for 40 mins, turning halfway, until the centre is hot.

How to freeze

Tip portions of the floured chips straight into freezer bags, then seal to freeze. Stack burgers between squares of baking parchment in a container or on a tray wrapped in cling film - the parchment will stop the burgers sticking together (but don't use greaseproof). Then simply remove as many burgers as you need at one time and re-cover the rest.

    This is the best beef burger recipe I have done. I changed it slightly, putting in less cheese and adding garlic and grated apple. These changes made it less fatty and more juicy. Completely delicious, and very easy.

    Was on the look-out for a good simple burger recipe so will be trying this one out tonight. However, almost more importantly...I wholeheartedly agree with Missy and am terribly excited at the thought of making batches of my own homemade frozen oven chips. What a great way to save those old potatoes that are starting to go a bit past their best in the veggie basket! Fab idea!

    Made these burgers last night very easy and was tasted amazing. Best burgers ever! Only made half and got 6 patties out so more than enough for me and my husband.

    Left out the cheese, no breadcrumbs, substitued dried chilli for a couple of fresh ones, pre-fried red onion, added three cloves of chopped garlic and tossed the shaped burgers in flour. Absolutely fab-u-lous!!!!!!!!!!!!!!!

    These are juicy and meaty, perfect for BBQ and for the whole family - I love them! Forgot to add my rating too ... 8 stars :) As to them falling apart, try adding a bigger egg and patting them into shape with some plain four ...

    amazing burgers! 1st time I made them I used all the ingredients and they were good but 2nd time omitted the chiili and they are probably the nicest homemade burgers Ive ever had. For the bread crumbs I used fresh white bread which made the burgers really moist. Added a slice of cheese and melted under the grill - amazing!

  • 1¼kg lean beef mince
  • 1 onion , finely chopped
  • 140g breadcrumbs
  • 100g mature cheddar , grated
  • small bunch parsley , chopped
  • 1 tbsp Worcestershire sauce
  • 1 egg , lightly beaten with a fork
  • 1 tsp mild chilli powder
  • 2½kg bag of potatoes , cut into chunky chips
  • 3 tbsp plain flour
  • 10 tsp olive or sunflower oil
  • burger buns , lettuce, sliced red onion, tomatoes, gherkins, and sauces or relishes, to serve
