Strawberry cheesecakes

This speedy, low-fat recipe means you can enjoy creamy cheesecake without the guilt

Method

  1. Put the biscuits in a plastic bag and bash with a rolling pin until you have chunky crumbs. Divide between 4 glasses or small bowls.
  2. Beat the soft cheese, yogurt, sugar and vanilla together until smooth, then spoon over the crumbs and chill until you are ready to serve.
  3. Stir the jam in a bowl until loose, then gently stir in the strawberries. Divide the strawberries between the cheesecakes and serve.

Top these little pots with whatever fruit you've got at home. For a delicious banoffee version, slice bananas and toss with a squeeze of lemon juice and a spoonful of caramel sauce, or roughly crush raspberries with peach slices to make it Melba-style.

    We love this dessert. So easy to make. I use Light Digestives for the base layer. Then have used either Greek 0 fat yoghurt or home made 0 fat strawberry yoghurt mixed with the low fat soft cheese. If using the Greek then I do add vanilla extract if using the strawberry I don't. I don't add any caster sugar at all as it is sweet enough for us all without it. For the strawberry topping I use fresh strawberries and add a dash of balsamic vinegar and a twist of black pepper. I prepare this and leave in the fridge until just before serving then add the jam to the strawberry mix and top off the dessert.

    This saved me last night when my pavlovas stuck to the foil! I whipped it up in minutes and they looked amazing served in martini glasses. Ok, I admit I didn't make the low fat version, instead using low fat cream cheese and whipping cream. It went down a storm though!

    I made these last night using strawberries and we all thought they were absolutely scrumptious. I couldn't find low-fat biscuits so just used Tesco's own ginger nuts. They were such a hit I've been asked to make them tonight too, so trying the peach melba version this time. Guilt-free cheesecakes... Heaven! :-)

    So quick, simple and tasty. I used 4 heaped tbsp of caster sugar, which was a bit of a mistake and perhaps a lot sweater than it should have been. Will definitely try different versions and less sugar next time!

    This worked really well, very easy to make and tasted great. You can't turn them out so have to serve in a glass as shown in the picture. I grilled fresh rhubarb will a tblsp of demerara sugar (and allowed to cool) to put on top.

    Gorgeous. Made these with my 6 year old daughter for tea. Really easy. Put crushed shortbread biscuits in base as that's all I had. Used frozen raspberries from freezer which I defrosted quickly in microwave. Will make again.

    I wanted to try this recipe because of the healthy element, unfortunatley the healthy element (greek yogurt) spoilt it entirely. The desert just tasted of yougurt no matter how much strawberry I put in. Will deffinately stick to double cream in future.

    Really simple to make, looks great, and everyone loved it. I didn't have ginger biscuits so just used digestives but mixed a little ginger in with them. I also used raspberries instead of strawberries, and used some frozen raspberries to make a raspberry sauce instead of the jam. Delicious.
