Strawberry cheesecakes

This speedy, low-fat recipe means you can enjoy creamy cheesecake without the guilt

Method

  1. Put the biscuits in a plastic bag and bash with a rolling pin until you have chunky crumbs. Divide between 4 glasses or small bowls.
  2. Beat the soft cheese, yogurt, sugar and vanilla together until smooth, then spoon over the crumbs and chill until you are ready to serve.
  3. Stir the jam in a bowl until loose, then gently stir in the strawberries. Divide the strawberries between the cheesecakes and serve.

Top these little pots with whatever fruit you've got at home. For a delicious banoffee version, slice bananas and toss with a squeeze of lemon juice and a spoonful of caramel sauce, or roughly crush raspberries with peach slices to make it Melba-style.

    Went to the supermarket and forgot the recipe so mistakenly used low fat creme fraiche with Greek yog instead of cream cheese - delicious! The 2nd time i used the cream cheese with Greek yog, but raspberries were on offer (didnt use the jam) - delicious! I will be making this simple yet successful dessert again and again!

    I made these for my fussy in-laws and I was pleased that they all really liked it. I was slightly worried that it would taste really low fat but I was proved wrong. Give it a go and be pleasantly surprised!

    I absolutely adore cheesecake or anything with a biscuit base for that matter. However, after eating one of these I was surprised to hear myself say that if I make them again (which I will do) I will leave out the biscuits. I just felt it was a nice dessert without them. Or at the very least I would perhaps use half the amount of biscuits. On the whole though a yummy pudding, that is quick to make and definitely doesn't taste low fat!

    I have made these, or a variation on them six times in the past fortnight, they are delicious! I use Tesco low fat digestives and have varied the recipes using raspberries or cherries (with respective jams). Very good jam makes all the difference.

    I had a friend come round for lunch, with not much notice! I was able to rustle this up as a quick light lunchtime desert and it went down a treat and i was asked for the recipe. The only thing was I did not have any greek yog so I added normal plain yoghurt with a dash of thick cream to give it a little more texture and worked just fine.

    I made this for my sister and brother-in-law as he has recently been put on a low fat diet. I could not get any WW biccies or total 0% greek yoghurt so used ginger nuts and ordinary low fat greek yoghurt instead. I also added a teaspoon of honey to the biscuit crumbs to help them stick together. The cheesecake part did not set (this might be due to the wrong yoghurt), so we didn't think it really was very cheesecakey, but all agreed that it was quite tasty for a healthy pud.

    O.M.G Delicious XD, It was lovely with just the Cheese and Yogurt and Sugar Mixed together, I added an extra few drops though so you can't taste the soft cheese. OMG It was to die for. Its better than some that you buy in the shops :) Defo Making it again :)

    For a low-fat dessert you really can't beat this! It's so tasty, easy to make - I didn't use correct amounts as I only made it for two I roughly added ingredients and it still worked out great, and it's very quick. The ginger nuts and strawberries work surprisingly well together. I will make this one again.
