Strawberry cheesecakes

This speedy, low-fat recipe means you can enjoy creamy cheesecake without the guilt

Method

  1. Put the biscuits in a plastic bag and bash with a rolling pin until you have chunky crumbs. Divide between 4 glasses or small bowls.
  2. Beat the soft cheese, yogurt, sugar and vanilla together until smooth, then spoon over the crumbs and chill until you are ready to serve.
  3. Stir the jam in a bowl until loose, then gently stir in the strawberries. Divide the strawberries between the cheesecakes and serve.

Top these little pots with whatever fruit you've got at home. For a delicious banoffee version, slice bananas and toss with a squeeze of lemon juice and a spoonful of caramel sauce, or roughly crush raspberries with peach slices to make it Melba-style.

    I made these for my family as a desert last night. They went down a treat and you couldn't even tell they were low-fat! I couln't get hold of low-fat biscuits so I used Fox's Ginger Nuts instead. I used raspberry jam and raspberries instead of strawberry jam and strawberries and it was delicious! I added more jam than the recipe stated to give it a more fruity flavour and these little delight were enjoyed by all.

    My hubby has to eat a low fat diet but really misses a naughty pudding. So as a treat this really hits the spot and is so easy to assemble.

    These are AWESOME! So easy and quick to make - but i did use mascarpone instead of low-fat cream cheese....perhaps turned it into a slightly less low fat recipe...ah, didn't use low-fat biscuits either....everyone i've made these for has worshiped them!

    Really quick and easy and couldn't tell they were low fat. I used a mango instead of strawberries as I had a ripe one that needed using and it was delicious. Will definitely be making again.

    These are little gems; it is so good to find a low fat cheesecake recipe without compromising on taste. I added a tablespoon of amaretto spirit to the sauce and finished it off with a sprinkling of icing sugar. Very yummy.

    These were really tasty and easy to make! I actually used low fat digestives because I'm not too keen on ginger biscuits - they worked well....and if you're worried about the biscuit crumb not binding together properly, why not mix them with some low fat spread....Perfect for a dinner party if you have 2 other courses to concentrate on!

    Have made this today as a pudding for our Sunday roast, it went down a treat! It was really lovely and you couldn't tell at all it was low fat. I will definitely be trying this one again.

    I made this for a Sunday dessert after the outside chicken kiev receipe. Its really easy to make and its so moreish. Becuase its made with low fat ingredients you can eat it without feeling guilty! Having said that I added a tiny bit of whipped double cream on top of the strawberries. Excellent receipe and I will be making it again for a dinner party!

    This was a delicious and satisfying dessert. I substitued the topping for lemon curd, and grated some lemon rind into the cheese and yogurt filling. Really enjoyed it. My only tip would be to serve this as smaller portions in little glasses, as I felt a bit overfaced afterwards.
