Easy risotto with bacon & peas

Not for risotto purists - this simple recipe has just 5 ingredients and the stock is added all in one go

Method

  1. Finely chop the onion. Heat 2 tablespoons of olive oil and a knob of butter in a pan, add the onions and fry until lightly browned (about 7 minutes). Add the bacon and fry for a further 5 minutes, until it starts to crisp.
  2. Add the rice and stock, and bring to the boil. Stir well, then reduce the heat and cook, covered, for 15-20 minutes until the rice is almost tender.
  3. Stir in the peas, add a little salt and pepper and cook for a further 3 minutes, until the peas are cooked. Serve sprinkled with freshly grated parmesan and freshly ground black pepper.

    Made this last night and it went down a treat! SO easy and SO quick!! (I didn't have any risotto rice in the house *gasp!* so I used basmati rice instead and it worked just as well!) Really yum!

    Why not saute the rice in a little of the bacon fat to coat? If you like you rice separate it makes a big difference.

    It was very easy to make but a little salty for me, tasty though. The 4yr old loved it so it's great for getting peas into her (no chance otherwise!). Unfortunately the other half really disliked it but he can't put his finger on what it is he doesn't like as he likes all of the ingredients! Arghhh! Don't you just hate trying to please everyone?!

    I'd read the posts - first-timer risotto cooks who said that this recipe was excellent, and you know what? They were spot on. My first time risotto making, and my partner say tht she wants this (and some ingredient experiments) at least once a week. Superb...

    I really liked it but it filled me up so quickly! My husband enjoyed it also. My sons not so much saddly. It was my first risotto aswell :)

    Yum! As my partner has a wheat intolerance we eat lots of risottos, this one was very moorish...in fact we ate the leftovers cold for supper and it was even nice cold.

    Very easy recipe with devastatingly good results - Risotto made easy. I added Chorizo as it's a personal favourite of mine. This dish will definitely be making another appearance soon.

    Made this for my other half once and he hasn't forgotten about it and has bragged about it ever since! Very easy recipe to follow and so versatile. I used flavoured rissotto rice to add an extra kick too. Yummy!!
