Ingredients

  • 1 onion
  • 6 rashers streaky bacon, chopped
  • 300g risotto rice
  • 1l hot vegetable stock
  • 100g frozen peas

Method

  1. Finely chop the onion. Heat 2 tablespoons of olive oil and a knob of butter in a pan, add the onions and fry until lightly browned (about 7 minutes). Add the bacon and fry for a further 5 minutes, until it starts to crisp.
  2. Add the rice and stock, and bring to the boil. Stir well, then reduce the heat and cook, covered, for 15-20 minutes until the rice is almost tender.
  3. Stir in the peas, add a little salt and pepper and cook for a further 3 minutes, until the peas are cooked. Serve sprinkled with freshly grated parmesan and freshly ground black pepper.

Had a few artichoke hearts left in a jar so added those, chopped, along with garlic - really tasty and lower in cals than quite a few other recipes

This risotto is amazing! I used leftover gammon instead of bacon, and added the garlic as suggested by the previous comments. I also added 1 tsp of dried parsley along with the salt and pepper. I will definitely be making this again!

Tried this last night, added garlic, chillis, spring onions and red peppers. Very tasty! Will definitely be making this again!

This recipe is amazing!! I have made it so many times now, added all different type of veg (whatever house gave hehe) and always turned up absolutely delicious! I have it on the hob right now with with extra courgette, red pepper and leek, but you can throw in absolutely anything, always turns out yummy. I think this is best risotto I have tried and I have tried a lot :D xx

Easy and tasty! Made with pearl barley instead of risotto rice. Will definitely do this again but next time I think I might make it with some extra ingredients to make it a bit more interesting.

Added garlic with the onion. Really nice n easy - no watching & stirring as u add ladle of stock!
Could use with various other ingredients. Will def b making again

Absolutely delicious - I didn't use the full amount of rice suggested. Risotto is very filling so everyone was quite full and content. Easy to whip up.

I used chicken stock instead of vegetable stock as I thought it would add more flavor.

Really love this, so easy and tasty although I use ham stock and add thin sliced pepperoni too for extra flavour. Yummy!

We have this often, usually with roast chicken. Not got the texture of a stand-and-stir risotto but tasty and so easy. Perfect for a midweek dinner.

This is now a regular dish in our household. It's simple ingredients, easy to make (even the hubby can make it) and nice and tasty. We also add a little garlic :)
