Easy risotto with bacon & peas

Not for risotto purists - this simple recipe has just 5 ingredients and the stock is added all in one go

Method

  1. Finely chop the onion. Heat 2 tablespoons of olive oil and a knob of butter in a pan, add the onions and fry until lightly browned (about 7 minutes). Add the bacon and fry for a further 5 minutes, until it starts to crisp.
  2. Add the rice and stock, and bring to the boil. Stir well, then reduce the heat and cook, covered, for 15-20 minutes until the rice is almost tender.
  3. Stir in the peas, add a little salt and pepper and cook for a further 3 minutes, until the peas are cooked. Serve sprinkled with freshly grated parmesan and freshly ground black pepper.

    I love this recipe! I have never cooked risotto before and due to this recipe have realised how easy it is. This is delicious and both my children love it. I am now trying lots of other risotto recipes!

    This was my first attempt at making risotto and it was delicious. We had a good traditional free range chicken for Mother's day and I made a stock with the carcass and used the stock to make this Risotto the following day - I don't think it would have been aywhere near as good without good stock. Just made it for two of us so am going to turn the leftovers in Arancini.

    I don't think I will ever make risotto any other way now, this was delicious ! I added mushrooms instead of peas and it was lovely. Be careful adding salt though as the bacon makes it quite salty anyway. Will try it with peas later in the week...........am a bit of a risotto addict!!

    I love this recipe. It's so quick and simple to make and I have made it several times for the family. I tend to use chicken rather than vegetable stock which I think is nicer.
