  • ½- 1 tsp sweet smoked paprika
  • 4 skinless chicken breast, each halved across the middle to make 2 thin escalopes
  • small bunch coriander, leaves roughly chopped
  • lime wedges, optional, to serve

Method

  1. Bring to the boil a saucepan of water big enough to hold all the potatoes and corn. Cook the potatoes for 12 mins, adding the corn after 6 mins, until both are tender. Drain well.

  2. Meanwhile, mix the sliced red onion with the lime juice and half the oil in a large salad bowl. Mix the remaining oil with the garlic, paprika and some seasoning in a shallow bowl, then toss in the chicken until thoroughly coated.

  3. Heat a griddle pan, then griddle the chicken for 3 mins on each side until cooked through. Tip the potatoes into the bowl with the onions. Stand a corn cob on one end on a chopping board, then slice down the length, cutting off the kernels in strips. Mix into the potato salad with the coriander and seasoning, then serve alongside the smoky griddled chicken, with lime wedges, if using.

This just didn't really do it for me. Nice ingredients but somehow it failed to combine into anything special... It might for you, though - don't be put off!

Really liked this but stupidly didn't half the potatoes. I added green beans too because I didn't think it would be substantial enough but how wrong I was, there's some left in the bowl! Loved the favours and the chicken, surprising was tasty enough with only the paprika and garlic. I would suggest just using tinned sweetcorn though as I made a terrible mess but ended up with the same flavour as tinned so seemed a bit pointless going that extra mile (and mess) for something of the same quality. Left the onion to marinate in the lime for at least 20 minutes and it softened it down but left a bit of crunch which was lovely! definitely make again :) so fresh and light.

Really liked the potato salad, used a little more paprika to give the chicken a good flavour, but think it maybe needed more of a kick

This was very yummy! just made it for me, I dont usualy like raw onion in a salad, but I decided to give it a go, and it was so delicious with the lime. I decided not to put in coriander, but I put a bed of watercress underneath the potatoes and sweetcorn to bulk it out a little, means no less calories, but still more food, and the chicken was fantastic, I put just the right amount of paprika, and scored the chicken and stuffed the garlic inside. Will make this again! Thanks GoodFood :)

I didn't have sweet paprika, so used the normal stuff, and some cayenne pepper, so it may have been more spicey than it was supposed to be, but easy, tasty and I like the salad alot.

Very simple and very tasty - a good one for a mid-week meal. I marinaded the strips of chicken in a mixture of olive oil and chipotle paste (which gave it the required smokey flavour plus a little heat). Shamefully I had never cooked corn on the cob before, but this turned out to be easy and the corn was sweet and delicious.

The other thing I did slightly differently was char-grilling the red onion, just to take the raw edge off, which I think worked pretty well. I also added some green beans to the salad as I had them to use up.

Overall, a success.

This was a quick and tasty dish but the chicken was not wonderful (just good) I would consider making it again (in part because it is so easy) but I am in no rush to do so. Don't let me put you off giving it a go though!

my partner and myself have just started doing weekly shops based around a prepared meal plan. it's saving us money and we're eating much more healthily as we're not using ready prepared sauces etc..
i found this recipe very simple and it was definitely full of flavour. the things i'd change would be the amount of lime..i would perhaps think about using half a lime rather than the whole one as i found the flavour quite intense and a little on the sour side..the chicken was lovely though and definitely something i'd do again considering how easy it was. :)

Really great recipe - was a hit with my boyfriend who can be quite fussy! I used tinned sweetcorn and added sum halved cherry tomatoes to the potato salad. I am making it again tonight!

Very tasty and very simple. I think the chicken could do with a little more seasoning though, perhaps a touch more paprika?

This is a very easy and tasty dish. I used tinned sweetcorn and didn't have any coriander. I would use more paprika and more garlic next time, but I thought I'd be careful on my first attempt!

A fab dish. Real easy and quick to make and really tasty. I loved the lime zing.

It was OK but relatively bland and nothing special. Would use more paprika next time. Was cooking for two so halved the quantities (but had a 350g bag of potatoes so used them all) and the portion size was tiny. No wonder it looks favourable on the nutritional info!

This was so easy & looked like a lot more effort went into it than actually did! However, I halved the ingrdients as there was just 2 of us and didn't think there was quite enough salad - so would bulk that out next time.
