Method

  1. brush the chops with the olive oil
  2. heat a heavy based griddle pan to very hot and griddle the chops for a few minutes each side
  3. chop the onion and put in a heavy based casserole dish
  4. lay the chops on top and pour in the cider and chicken stock and thyme and mushrooms and bring to the boil and place in the oven for 1 hour 50 minutes
  5. add the butter beans - green beans and sweetcorn for the last 10 minutes - serve with baby new poatoes

  • 6 thick porkloin chops
  • olive oil for brushing the chops
  • 1 large onion
  • 1 500ml bottle of pear cider
  • 200ml chicken stock
  • small ready packed button mushrooms
  • 2 x 220g cans of butter beans
  • a sprig of thyme
  • 2 handfuls of green beans (optional)
  • handful of sweetcorn
  • baby new potatoes
