Smoked duck salad

Here's our simple version of a very special restaurant-style salad, inspired by a Galvin brothers dish

Method

  1. Toss the pomegranate seeds, toasted flaked almonds, frisée lettuce and snipped chives. Whisk the orange juice with red wine vinegar and a squeeze of clear honey to taste. Season, then toss with salad. Divide the sliced smoked duck breast between 2 plates and top each with salad.

    Made a variant of this as a starter on Valentine' s day. As were not fans of frisee lettuce I swapped it for lambs lettuce and added a little finely shredded beetroot and left out the almonds and chives as I didn't have any. It looked lovely with the pomegranate seeds and the dressing cut the greasyness of the duck beautifully. My man was looking for more salad which is unusual so I will definitly be doing this again!
