Finnish apple pie

Method

  1. Heat the oven to 190C/fan170C/gas 5. Roll the pastry out to pound coin thickness, then line a lightly buttered pie dish and crimp the edges. Fill the pastry crust with the apples.
  2. Mix together the soured cream, vanilla, cinnamon, half the sugar and egg. Pour over the apples. Sprinkle on the rest of the brown sugar. Bake for about 40-45 minutes until the pastry is crisp and the filling cooked.

    I have made this several times now and it is delish! I am afraid I cheat and buy ready made pastry cases but it went down a storm with everyone at work (I always make 2 pies at a time) and finnicky husband sneaked one out of the house to take to work! I used less sugar as the apples were already quite sweet.

    I must admit I cheated and used a ready made pastry case but this was just delicious. The pie did have an unappetising brown colour to it (I guess from the cinnammon and brown sugar) but it tasted divine. I only needed 2 apples but that was probably due to the size of my pastry case. So simple to make but tasted wonderful. Will be making again very soon

    Love this recipe, cooked it tonight for a trial run and I think it's the best apple pie I have ever had. It is so simple and so tasty that I have transcribed it into my recipe book ever to be a part of our household recipe's.

    Yummy! I cheated and used a bought sweet pastry case. This used up a tub of soured cream and a glut of apples well. Will definitly make again, very easy to do.
