Lasagne with spinach & mushrooms

Method

  1. Cook mince, onion, garlic, mushrooms for 10 minutes. Add tomatoes, wine, herbs, plus 1 tomato can of water. Simmer for 25 minutes, stirring occasionally. Season.
  2. Heat oven to 200C/fan 180C/gas 6. Tip half mince into a baking dish. Add 3 sheets lasagne, then rest of mince and lasagne. Lay over tomatoes, spinach. Mix 3 tbsp milk with the cornflour. Pour rest of milk into a pan, stir in cornflour mix. Simmer, whisking until smooth. Season. Pour over the spinach. Sprinkle with Parmesan. Bake for 30 minutes.

    Re the lady who can't find fresh lasagne sheets: soak dried ones for about 20 minutes in medium hot water - tastes no different to the untrained pallete

    My family really enjoyed the lasagne but would leave out the tin of water as there was a lot of liquid and had to drain it off. Also sed a jar of Dolmio béchamel sauce instead.

    Made the lasagne this evening. I will be giving it another go with further modifications. Usually if a recipe doesn't meet my exacting (!) standards I won't bother with it again but I will in this instance because 1. Good sized portion for the kcals 2. perfect consistancy and preportions 3. such low cals for a lasagne. The big failing for our taste was that it was very bland. The alterations I made to it was extra spinach, quorn mince & Old Winchester cheese. In mark two I intend to add Yorkshire & Dark Soy Sauce to the mince mixture and less water (half a can?) it needs to be richer and more flavoursome to combat the blandness of the white sauce (not unpleasantly creamy) and don't want to increase the calories by adding more Old Winchester. Will revisit at a later date and post my comment.
