Spaghetti with quick watercress, spinach & rocket pesto

With a bag of salad and a food processor you can whip up this speedy pasta sauce

Method

  1. Put the salad in a food processor and briefly whizz to break down. Add the nuts and garlic then whizz again then with the motor running, add enough oil to make a saucy consistency, about 150ml. Pour into a bowl, stir in the cheese and season.
  2. Cook the pasta following pack instructions. Drain then toss with the pesto.

    This recipe was easy to prepare and my family thoroughly enjoyed it. It stands alone well as a vegetarian dish, but you could easily add some sources of animal protein, like slices of hard-boiled egg or grilled chicken, or of course bacon. I wasn't able to find a salad bag with watercress in it, but one with mesclun, rocket and spinach turned out well. Note that when you buy pine nuts they are not usually ready toasted. I put mine in a small frying pan over low heat for a few minutes, shaking them around frequently, until they were browned.

    Absolutely delicious!!!! I added some steamed (or boiled) cauliflower and broccoli to bulk it up and it became a very filling healthy dinner! Even ideal for veggies! Will definitely make again! And it was SO easy to make!!!

    Horrid - it tasted of nothing except had a nasty bitter tang of aftertaste. The whole thing went in the bin and it is not often I give up completely on something!
