Courgette, chilli & mint pizzas

Ready-made flatbreads and seasonal veg make a quick pizza for the perfect light lunch

Method

  1. Lightly brush the flatbreads with oil and grill for a minute on one side, then turn. Toss the courgette, garlic and chilli with oil and arrange over the breads. Add the mozzarella. Grill until the courgette starts to wilt.
  2. Season well. Add the mint and a slug more oil if you like.

    Absolutely delicious! Fresh, light, yet filling and tasty. Lovely 'clean' flavours given a Summer feel with the integral mint.

    Really, really nice. I used Mission Flatbreads which are quite thick and very authentic. You can get them in most supermarkets. Definately Morrisons and Tescp

    I made these pizzas last week and will be making them again this week as they were delicious! Fresh, summery and gorgeously tasty thanks to the garlic, chilli and mint. It's nice to have a treat like pizza for dinner which is low fat and low calorie.

    So delicious! I added some salt and pepper after baking because courgettes have so mild taste. Very easy and fast to prepare and relatively healthy. Will totally make these again :)

  • 2 large flatbreads or 4 small, white or wholemeal
  • olive oil
  • 2 courgettes , cut into ribbons using a potato peeler
  • 1 garlic clove , crushed
  • 1 red chilli , finely sliced, use a larger one for a milder flavour and a bird's-eye if you like things hot
  • 1 ball mozzarella , torn into pieces
  • a handful mint
