Courgette, chicken & pistachio couscous

Serve this colourful summer salad for a casual supper or midweek family meal

Method

  1. Mix the couscous, pistachios, courgettes, and most of the coriander in a bowl. Add the harissa and most of the orange dressing and toss. Heap onto plates and top with chicken and more coriander, dress with the remaining dressing.
  2. Spoon over some yogurt and extra harissa if you like.

    Superb! Made with brown rice as I was low on couscous, and used Delia Smith's Harissa style dressing as I didn't have oranges or harissa! Absolutely delicious!

    Disappointed with this, I didnt particularly like the orange dressing and the pistachio nuts sounded really good but were completely masked by the harrissa...and became soft when left overnight. Thought this was going to be a great find but quite disappointed now. Sorry, not for me!

Ingredients

  • 200g couscous , cooked following the packet instructions
  • a large handful pistachios , toasted and roughly chopped
  • 4 courgettes , sliced on the diagonal and fried in a little olive oil
  • a bunch coriander , chopped
  • 1-2 tbsp harissa , depending on how hot it is
  • 2 oranges , juiced and zested mixed with a splash of white vinegar and some olive oil to make a dressing
  • ½ large roast chicken or 1 small, pulled into pieces, skin removed
  • natural yogurt to serve (optional)
