Roasted tomato & feta parcels

A clever way of cooking cheese on the barbecue

Method

  1. Make 6 double foil parcels by putting 2 squares of foil on top of each other. Divide the tomatoes and cheese between and tuck in a rosemary sprig. Drizzle over olive oil, scrunch in the top to make an enclosed parcel.
  2. BBQ for 10-15 minutes until the tomatoes have started to burst open and the cheese has softened. Open and drizzle with balsamic before serving.

    These are great and very easy. Lovely served with some crusty bread to soak up the juices. Beware the tomatoes get very hot - don't pop them into your mouth whole

    I live in Cyprus and my Mum is always doing these! Although she uses a couple of small fresh basil leaves in each parcel instead of the rosemary. They are so simple, and always go down well with guests.

    Mmmm, was delish and so simple too! Served it with Turkish flatbread, yum. Will make lots more next time as all parcels were gone in an instant at our BBQ party :)

    Top marks for this barbecue recipe! So simple but tastes amazing! My kind of recipe (foolproof and full of flavour) Friends were well impressed! I used a couple of torn basil leaves in each parcel as Rosemary is the only herb I dont like! No leftovers!!

    These are scrum-diddly-umptious. (though i, too, prefer basil to rosemary) I've added to the recipe slightly and i like to think they're even nicerererer done the following way. Before adding the oil, i medium heat it, bung in two cloves of garlic and a small red onion (both finally chopped). Fry till the garlic and onion start to turn brown. Then just add oil, onion and garlic to the individual parcels as normal. However, if you're preparing the parcels for later use, it's best to let the oil cool first. Please, try it. They taste loads better for just a little extra work.
