Smoky sweet potato wedges

Baked in the oven, these are the perfect match for food cooked over hot coals

Method

  1. Heat the oven to 200C/fan 180C/gas 6. Toss the wedges in olive oil and arrange on a baking tray. Cook for 30 minutes until tender.
  2. Mix the salt and paprika and sprinkle over to serve.

    My husband hates sweet potato so I thought I'd give these a try to see if I could change his mind - it worked! He loved the flavour and only at the end realised that they were sweet potato!! They were really simple to make and work particularly well with barbecued meats and salads in the summer. Will definitely be making these again!

    The perfect compliment to a main meal or a great snack on the side. I left them in the oven a bit longer to let them crisp up even more! I cooked them with Mary's Maple and Orange Chicken. My guests were so impressed.

    For me the potatoes took so long to cook, next time I might try part boiling them and then crisping them up in the oven.

    I tried sweet potato wedges for the first time last week - amazing!! I actually prefer them to normal potatoes, and adding abit of spice (i used chili powder) just improves them further...bit of mayo on the side...YUM!

    Just made a 2nd attempt at these.... Par boiled the wedges 1st for about 3 mins this tome, when finished they were much softer inside but nice 'n' crispy outside. Can't wait for go number 3!
