Peanut noodle salad
Break out from the rut of salad leaves and potatoes for barbecue side dishes - this speedy salad works brilliantly

Vegetarian
- Cook the noodles until just tender, rinse in cold water and drain. Mix all the dressing ingredients with 2-3 tbsp boiling water until single cream consistency.
- Toss with the noodles then add veg and toss again before serving.

- 1 red pepper , sliced
- small bunch radishes , sliced
- ½ cucumber , halved lengthways, seeds scooped out and sliced into half-moons
- 4 spring onions , sliced
DRESSING
- 4 tbsp crunchy peanut butter
- 2 tbsp chilli sauce
- 2 tbsp soy sauce
- 2 tsp sesame oil
