Peanut noodle salad

Break out from the rut of salad leaves and potatoes for barbecue side dishes - this speedy salad works brilliantly

Method

  1. Cook the noodles until just tender, rinse in cold water and drain. Mix all the dressing ingredients with 2-3 tbsp boiling water until single cream consistency.
  2. Toss with the noodles then add veg and toss again before serving.

    I made this for a BBQ and it is lovely, my only complaint is that it does stick together - and it can end up in a big lump in the bottom of the bowl which makes serving hard. It is good the next day as the it seems to relax a bit more. The second time I made it I added some cold water to the dressing to losen it up - much better! definately worth a try if you have a lot to feed as it is relativley cheap, it goes well with chicken.

    I doubled the quantity to make for a large BBQ and was making the dressing thinking that 4 tbsp of soy sauce was a bit much, so only used three and then tasted - not nice!! Far too salty, so rescued the dressing with more sweet chilli and the juice of a couple of limes - fortunately when mixed the salad the end result was good. I also added fresh mint which was great and would be tempted to throw in some chopped peanuts next time aswell.

    Think the recipe is brilliant, but as someone said it does stick together. It's better if u make it the night before

  • 300g egg noodles
  • 100g mangetout , blanched and halved lengthways
  • 1 red pepper , sliced
  • small bunch radishes , sliced
  • ½ cucumber , halved lengthways, seeds scooped out and sliced into half-moons
  • 4 spring onions , sliced

DRESSING

  • 4 tbsp crunchy peanut butter
  • 2 tbsp chilli sauce
  • 2 tbsp soy sauce
  • 2 tsp sesame oil
