Strawberry marshmallow mousse

This super-quick make-ahead dessert was created by Good Food readers Gemma Newman and Ruth Allott

Method

  1. Put all but 2 strawberries into a pan along with 100ml water and the sugar. Over a medium heat, cook strawberries until soft enough to mash, about 3 mins. Take off the heat and squash the berries, using a fork, until pulpy. Add the marshmallows, then stir them into the hot strawberries until they dissolve. Leave to cool.
  2. Whip the cream until it holds its shape. Fold the cream into the cooled strawberry mix, then spoon into one bowl or separate pots and chill for about 2 hrs, or until set. Cut the reserved strawberries in half and use to decorate.

    A yummy way to use up strawberries! Have made this for kids and adults alike and it always goes down a treat! My two year old niece was shovelling it down like there was no tomorrow and she doesn't even like strawberries apparentley!

    Excellent recipe. I added some ameretto in the first time which was lovely & second time used the moose mixture on a bed of crushed biscuits like a cheese cake. Delicious both times!

    I agree with the comments above - the strawberries need to be blended or pulped very carefully as I was put off by the large bits in the mousse, despite spending a while forking them in the pan! May just be me, as I prefer smooth mousses rather than bitty. It was also a bit too sweet. I'm not sure the amount of sugar is necessary, as the marshmellos and strawberries are already very sweet.

    I made this using raspberries instead of strawberries. It was lovely. Very easy to prepare but do agree with one of earlier comments it is very rich and quite sickly so I think it would be better as a smaller dessert maybe in a ramekin or dish of this size. But it is lovely even if it is naughty!

    I absolutely love this recipe for taste and speed, everyone loves it sadly never any left for next day! I have also made using raspberries (sieve the pulp to remove seeds prior to blending with marshmallows) which has also been equally popular even for my husband who wont eat either fruit by themselves.
