Strawberry marshmallow mousse

This super-quick make-ahead dessert was created by Good Food readers Gemma Newman and Ruth Allott

Method

  1. Put all but 2 strawberries into a pan along with 100ml water and the sugar. Over a medium heat, cook strawberries until soft enough to mash, about 3 mins. Take off the heat and squash the berries, using a fork, until pulpy. Add the marshmallows, then stir them into the hot strawberries until they dissolve. Leave to cool.
  2. Whip the cream until it holds its shape. Fold the cream into the cooled strawberry mix, then spoon into one bowl or separate pots and chill for about 2 hrs, or until set. Cut the reserved strawberries in half and use to decorate.

    These were really really nice, i wasn't too sure when making these, how light and moussy these would be but im pleased to say they really lived up to their name, and the marshmallow flavour was very nice and different. The only thing i would change next time is instead of pulping the stawberries, i would blend them to make them completly smooth.

    A really lovely and light dessert, the second time I made them I did blend them and they were lovely but my daughter thought the origional method was nicer.

    Easy to make and delicious. It wasn't too sweet as I had anticipated with the marshmallows. I made it for friend's potluck supper and it went in a flash. Thoroughly recommend it especially for summer.

    Very good summer pudding. I added layers of sponge fingers between mousse before letting it set in the fridge. Very easy to make and tastes wonderful.

    Made this last night, blended the strawberries rather than pulping with a fork, final texture was beautifully moussey and smooth. Tasted sweet without being sickly, lovely easy pudding.

    I made this yesterday for my family and they loved it! Everyone wished there was more! I will deffinately be making this again :) I didn't blend the strawberries and i don't think there would be any need to do so. Great recipe! :D

    I made this today and my kids absolutely loved it! I split it into 2 batches before I put it in the fridge, I added some crushed shortbread biscuits to both, and some almond extract into one, and amaretto into the other making it a bit more grown up :)

    Great little recipe. I made this for guests and it was received very well. The only thing I would change is to make the portions smaller. I would serve this for 6 rather than 4 especially if there are shortbread involved.
