Sausages braised in cider

An easy one-pot that's even better when served with a hearty pile of mash

Method

  1. Heat a little oil in a frying pan with a lid. Brown the sausages then remove from the pan. Add the onions and bacon (if using) and cook for 15-20 minues. Add the flour and stir until absorbed. Gradually add the cider, then the mustard, and stir until dissolved. Bring to a simmer then add the sausages, put on a lid and cook for 45 minutes.
  2. To make the champ, put the milk and spring onions in a pan and cook for 10 minutes. Turn off the heat, add the butter and leave to melt. Boil the potatoes in salted water until tender. Drain and mash with the milk mix. Serve with the sausages and gravy.

    this was fab, i omitted the milk and simply fried spring onions and mashed in mash with a tiny bit of butter to bring the fat content down, i dry fried leaner sausages to try to reduce the fat, the bacon did not fit well we both said next time we would put in one of red pepper/celery/carrot instead of bacon. its lovely and really tasty and cheap, i served with mangetout and corn.

    I used celery with the onion - meant to use a carrot too but didn't have any in and forgot to buy one. Didn't use the bacon. Really very yummy!

    I didn't choose to do the onion and milk with my mash - cream instead!.....with regards to the casserole, buy good quality sausages would be better next time, my'n were cheap, and therefore greasy - plus they took the flavour of the cider away...I shall use a stronger one next time...however, my husband and I both agreed it was lovely, and so I shall be making it again - Very good....

    Didn't bother with the bacon but the dish was lovely. Perfect comfort food. lmc29 don't see why this can't be frozen. I would defrost in the fridge over night and then re-heat thoroughly before eating.

    I made this today. As a slight twist I kept half of the bacon aside and mixed it with the mashed potato, along with some grated parmesan. I transferred the part cooked sausages, onions, bacon and cider sauce into an oven proof dish and topped with the mash. Sprinkled with more parmesan and olive oil and finished off in a hot oven for about 30 minutes. It almost looked too good to eat.     I liked it a lot. At half of the cooking time for the sausages, i added a little bit of water because it reduced to soon. This dish tastes great

    I swapped the bacon for some finely diced chorizo and also sprinkled some grated applewood smoked cheddar on top of the mash. Definitely cook this one again.

    Cooked for Sunday lunch in Cumbria in August! Fabulous, fussy kids ate it really well. Veg wise I added (with the onion) 3 diced carrots, a leek & a pepper, omitted the bacon. Will definately cook again but would recommend pre grilling sausages, which I will do next time & probably making more cider sauce as we all loved it!. Served with creamy mash (minus the spring onions to please the kids) & peas. On my winter or miserable weather menu from now on!

    Simplified this idea and used pork and apple sausages with a cider onion gravy. The gravy and sausages were so flavoursome I'm glad I just did a plain pomme puree and some spinach on the side. Surprised by how delicious it was!
