Mozzarella, beetroot & rocket salad

A fresh colourful salad that's just the thing to brighten up a midweek mealtime

Method

  1. Divide the rocket, cheese and beetroot between 2 plates. Whisk the vinegar and mustard together then whisk in 2 tbsp olive oil and season.
  2. Drizzle over the salads then scatter over pine nuts.

    This is a really quick and simple salad that looks colourful and tastes great. So nice to do something different with mozzarella and beetroot, and went down well at a family BBQ

    Delicious! Served at a bbq as a side dish rather than as a main. Didn't have any pine nuts but it was great without them.

  • 2 tbsp red wine vinegar or sherry vinegar
