Manchego is a firm, mild Spanish cheese. Emmi Cave-aged emmental is a good substitute.

I serve slices of Manchego topped with Jamon Iberico and home made Membrillo drizzled with cold pressed extra virgin Spanish olive oil as a starter.

Maggie Beer does a great quince Paste. You can buy it online or supermarkets or delis should stock one. You can slice it as it is firm and or cut into cubes etc. Yummy with cheese platters!
