Ingredients

  • 500g summer fruit (we used raspberries, blackberries and blueberries)
  • 4 tbsp demerara sugar
  • 7 slices from a small cinnamon and raisin loaf (we used Waitrose's Richly fruited sliced loaf)

  • crème fraîche or fromage frais, to serve

Method

  1. Heat oven to 220C/200C fan/gas 7. Tumble ¾ of the berries into a medium baking dish. Whizz the remainder of the berries in a food processor to make a purée, then stir this into the dish along with 2 tbsp sugar.

  2. Spread the loaf slices with butter, then cut into triangles. Cover the top of the fruit with the bread slices, then scatter with the rest of the sugar. Cover with foil, bake for 10 mins, uncover the dish, then bake for 5 mins more until the fruit is starting to bubble and the bread is toasty. Serve with dollops of crème fraîche or fromage frais.

Very nice and easy but rather sharp!

I had some summer fruits from last year left in the freezer when it defrosted after leaving the door open by mistake. There was also 2 packs of hot cross buns that also defrosted so I thought i'd try this recipe to use them up. What a fantastic success out of a potential waste. Yummy. Shame berries are too expensive to do it very often. xx

In an effort to be super-healthy I decided the butter wasn't essential. Mistake! The brown sugar on the top failed to caramelise even after twenty-five minutes in the oven, leaving a dry, powdery, tooth-achingly sweet topping. But a nice, easy pudding otherwise.

I love how this is so easy and healthy. I added bananas and broke some dark chocolate over the pudding when I got it out. Definitely making this again very soon!

Great Dessert, really easy. Brother suggested multi fruited bread for next time but I loved it how it was and so did everyone else.

I made this for supper with the girls and it was fantastic - very well received. So quick and easy to prepare in advance - will definetly do again.

I found I had both the loaf and the summer fruits in the freezer so thought I would try this pudding out.
I added a little Creme de Cassis to the fruit and the result was delicious.
I will certainly make this again.
