Ingredients

  • 2 tsp olive oil
  • 1 red onion, diced
  • ½ Scotch bonnet chilli, deseeded and finely chopped
  • 400g can chopped tomatoes
  • ½ x 295g bottle Levi Roots Love Apple Tomato sauce or tomato sauce with a good splash Tabasco
  • ½ tsp allspice
  • 2 x 200g bags tortilla chips
  • 200g jar sliced jalapeno chillies
  • 2 x 125g balls mozzarella, torn
  • small handful coriander, chopped
  • 230g tub fresh guacamole
  • ½ x 300ml pot soured cream

Method

  1. Heat oven to 220C/200C fan/gas 7. Heat the oil in a frying pan, then soften the onion and chilli for a few mins. Stir in the tomatoes, tomato sauce and allspice. Bubble for 1 min, then remove from the heat.
  2. Take a large ovenproof dish or plate and pile on the tortilla chips. Cover with the tomato sauce, then sprinkle with the sliced jalapeños and mozzarella.
  3. Place in oven for about 15 mins until cheese is melted. Scatter with coriander. Serve with guacamole and soured cream on the side.

I made this for a dinner with friends, and everybody was amazed by it. They all loved it. Actually, thay loved it so much that thay eat a lot of this dish and weren't able to eat anything else after :)).

This was a big hit for a crowd. Very easy to assemble and looks colourful and appetising.
I made the sauce the day before and as someone suggested, used tomato ketchup as I forgot to buy Levi's sauce…sorry Levi! I'll definitely do this again.

Sounds lovely and I'm very tempted to make this for sat night, can be prepared separately ahead and just thrown together when ready to cook.Also I'm tempted to add shredded chicken as i do like a bit of meat

Spicy, but absolutely delicious! I've made this several times and it always go down very well. I also just use tomato ketchup with a splash of Tabasco, rather than Levi Roots Love Apple Tomato sauce.

A simple recipe with a very tasty result! I have made this for a late night's tea whilst watching a film. Couldn't be easier, perfect for a cosy night in!

I have made this for a meeting at our house tonight, all hungry blokes, so to bulk it out to a main i have layered nachos with full homemade chilli con carne, then grated cheese over, then oven until cheese melted. then dollops of guacamole, salsa and sour cream and spring onions and served with salad and Garlic bread. very scrummy.

Lovely, I couldnt find any Scotch Bonnet chillies so I just used normal red chillies, Was delicious! Will def make again!

add Quorn mince to the tomato sauce to make this a great Main.

This is nice and spicy, but put the tortilla chips over the sauce if you don't want soggy ones

Great World Cup food!!! I down spiced a little, used green peppers instead of jalapeños and some very lazy chilli with the onion. Excellent!!!

My daughter made these for a starter for a World Cup themed dinner. The quantity served six people very generously. They were absolutely delicious and they were voted the best nachos ever.
