Salsa verde

This sauce may be rustic and rough, but use good-quality ingredients and there isn't anything better to serve alongside grilled fish

Method

  1. Crush the garlic in a pestle and mortar, add the anchovy and crush again to a rough paste, then add the shallot and lemon zest and give it a good mix to release the flavours.
  2. Stir in the capers and herbs and lemon juice, bruising the herbs a little.
  3. Season and add enough olive oil to get the consistency you want.

    Had this last night (valentines) with a rainbow trout fillets, went beautifully with the trout which could handle these flavours (though you dont need much). My only comments are that the garlic should be very finely chopped or crushed in a garlic press first as it takes a long time to break it down into a paste. Likewise it helped to chop the anchovies up first. DELISH!

    Really nice. Had it with smoked mackerel and it cut through the oiliness well. May add a bit of dijon mustard next time for some heat.
