10-minute couscous salad

This makes a great lunchbox filler for a day out and is equally good at home from the fridge

Method

  1. Tip couscous into a large bowl, pour over stock. Cover, then leave for 10 mins, until fluffy and all the stock has been absorbed. Meanwhile, slice the onions and pepper and dice the cucumber. Add these to the couscous, fork through pesto, crumble in feta, then sprinkle over pine nuts to serve.

    Very quick and easy. Took it camping with me for a BBQ and went great with chicken shish kebabs. Everyone enjoyed and the bowl was completely clean afterwards

    I used grilled red pepper, as well as matured goat cheese instead of feta. I also made fresh pesto in wet&dry grinder, adding extra olive oil so to make it work better as a dressing

    Really nice as well as quick and easy. Great for lunchboxes. I changed it slightly by using red tomato based pesto. I also cut the peppers into chunks rather than slices - bit easier to eat at the desk!

    Made this as an accompaniment to a recent bbq that I had. Went down an absolute storm! Went very well with various grilled meats and spicy koftas. Have made several times since. Perfect for a packed lunch with some salad leaves and grilled chicken - very tasty.

    This was just lovely! I added some chopped cherry tomatoes and lemon juice and used a crumbly cheddar rather than feta. I didn't have pesto so left it out. Oh and a generous grinding of black pepper. Gorgeous.

    I have made this so many times as it's fantastic, you can also swap the pesto for balsamic vinegar and it works great.. last a couple of days in the fridge! Fab!

    Fantastic ! Had no cucumber in so I replaced it with courgette briefly fried in some garlic infused olive oil also added about 4 sundries tomatoes finely chopped - a winter version ! . Everyone loved this - will make it again soon !
