Ingredients

  • 100g couscous
  • 200ml hot low salt vegetable stock (from a cube is fine)
  • 2 spring onions
  • 1 red pepper
  • ½ cucumber
  • 50g feta cheese, cubed
  • 2 tbsp pesto
  • 2 tbsp toasted pine nuts

Method

Tip couscous into a large bowl, pour over stock. Cover, then leave for 10 mins, until fluffy and all the stock has been absorbed. Meanwhile, slice the onions and pepper and dice the cucumber. Add these to the couscous, fork through pesto, crumble in feta, then sprinkle over pine nuts to serve.

Really simple and nice. Used roasted pumkin and sunflower seeds instead of pine nuts.

Really delicious!! I used quinoa as I'm gluten intolerant, used chicken stock & added sliced, marinated chicken breasts. So good, will definitely be making again!

Love this simple salad, it's quick to make and full of flavour. We substituted mozarella for the feta and it worked just as well. Definitely a recipe to keep.

This is my all-time favorite salad! I make it in a much larger batch and replace the pine nuts with cashews to save a bit of money, plus I love cashews. When I serve it with grilled chicken, I cook extra chicken and cut it up later and add it to the salad for leftovers. It makes for a quick and easy meal in a bowl. My 1 year-old can't get enough of this salad!

Very tasty! I made it with Israeli (pearl) couscous instead which worked well...added a few cherry tomatoes cut in half, extra pine nuts and feta (200g!) and a drizzle of olive oil and lemon at the end. Really delicious!

Yum, made this for my 13 year old daughter who loves couscous and will do it for packed school lunch, as an alternative to boring sandwiches now and again. Didn't have the feta and used mild onions as didn't have the spring onion either and it tasted delicious. Great for getting some of those healthy ingredients into a teenager!

This salad is perfect when you are looking to lose weight. A very light, easy and yummy. Great for busy parents! Next time will try add red chilli and lemon juice.

I absolutely love this recipie and make it every Summer. I have made some modifications over the years - I don't use spring onions and I add some sliced Queen olives as I love the taste of these. It is brilliant as a side dish at a BBQ and a very welcome variation for vegetarians.

I make this most weeks! I add a bit of rocket in too which really complements the couscous.
Such a good recipe to add to fish or chicken. We love it!

Love this. Used mint and toasted almonds flakes instead of pinenuts. Great with ciabatta and houmous for supper and loads left for lunchbox.

Everyone I've made this for has raved about it and my boyfriend insists we have it on a regular basis! As I don't like cheese, we have it without the feta but it's still packed with flavour and texture. I've never made anything so quick and easy that tastes so great!

At last I have found an alternative to my usual cous cous salad. This is sooo tasty and a very nice side dish for our BBQ. I am looking forward to having the leftovers for my lunch tomorrow.

Absolutely a hit in the family! I made it today and everybody especially my dad loved it! I didn't have spring onion at the moment so I substituted it with chopped red onion, it worked fine!! Will definitely make it again, what a fresh and healthy summer dish!!

Really easy to do and really tasty. I made it with Quinoa instead of cous cous, as one of our guests was gluten intolerant. It worked really well.
