10-minute couscous salad

This makes a great lunchbox filler for a day out and is equally good at home from the fridge

Method

  1. Tip couscous into a large bowl, pour over stock. Cover, then leave for 10 mins, until fluffy and all the stock has been absorbed. Meanwhile, slice the onions and pepper and dice the cucumber. Add these to the couscous, fork through pesto, crumble in feta, then sprinkle over pine nuts to serve.

    Wonderful dish! I replaced part of the stock with fresh lemonjuice and added chopped fresh mint. It was great!

    This is just delicious. I left out the toasted pine nuts the first time around - which is not advised as they really make the dish! Great for lunch boxes.

    ACTUALLY took 10 minutes, healthy, yummy, travelled well. The addition of pesto really makes it I think. :)

    I replaced Feta cheese with Wensleydale as I am not a lover of Feta and I also used yellow peppers to give even more colour. Supplied lemon wedges for those who wanted a little extra tang to the flavour. Very favourable with my lunch guests!

    my kids love couscous i offten added tomatoes olive oil and garlic and chillies to spice when i make couscous i allways make up more than needed as its a good stanby in fridge for a few days
