Gammon with pineapple & papaya salsa

Give that old-school meal of gammon and pineapple a new lease of life with this simple but stylish version

Method

  1. Put the gammon slices on 4 plates. Combine the pineapple and papaya with the chilli, coriander, lime juice, zest and season.
  2. Mix well and spoon the salsa over the gammon. Serve with the rocket.
