Chicken & chorizo jambalaya

A Cajun-inspired rice pot recipe with spicy Spanish sausage, sweet peppers and tomatoes

Method

  1. Heat the oil in a large frying pan with a lid and brown the chicken for 5-8 mins until golden. Remove and set aside. Tip in the onion and cook for 3-4 mins until soft. Then add the pepper, garlic, chorizo and Cajun seasoning, and cook for 5 mins more.
  2. Stir the chicken back in with the rice, add the tomatoes and stock. Cover and simmer for 20-25 mins until the rice is tender.

Use up leftover Cajun seasoning

Cut 2 chicken breasts into strips, mix 1 tbsp of Cajun seasoning with a little oil and rub all over the chicken. Fry for 6-8 mins until golden and cooked through. Serve with guacamole, soured cream, a tub of salsa and some flour tortillas.

    Used this recipe a while back and forgot to comment! Gorgeous, very easy with an instant hit of flavours. I did use extra stock, and also added more chorizo than stated along with peas and red and yellow peppers! Having this again for dinner tonight- yummy!

    Just delicious!! Used a little extra of everything and now have a perfect dinner sorted for another night this week too. Burnt it a tiny bit but it actually is so much nicer with a couple of crunchy, smokey bits!

    Gorgeous!! I used paprika instead of Cajun seasoning and it went down a treat. Definitely a favourite in our house. Oh and I needed to add a lot more water than described.

    A very easy to make recipe which is full of flavour. I've made it twice now and each time I thought there was to much water. There isn't it gets fully absorbed.

    Tasty and simple. I find chicken thighs more flavoursome and less likely to dry out than breast, though. I also found it needed more stock - around 500ml.

    Really great flavours! Tried to do with brown rice (as pefer wholegrains where possible) but it took forever! Think next time I would cook the rice in the miscrowave and then add to speed it up a little. As some people have suggested I cooked the chicken only briefly before adding to the rest of the ingredients as it was in the sauce so long I didnt want to overcook it. It was lovely and tender and just pulled apart!

    This was sucj a cheap and easy meals and lasted 2 nights. I also added more stick about 450 ml and pees for more veg.

    This was such a cheap and easy recipe. I also added more stock, about 450 ml. I didnt have any cajun spices so seasoned the chicken with parika. Also i never had any chicken stock so used a week chicken gravy. It tasted great!

    Very nice. Was well received by my husband and in laws. I didn't add extra liquid but I found it stuck to the pan a bit too much so next time I'll add a little.

    My boyfriend and I LOVE this meal. It's also great for when friends come over for dinner. You can prep it beforehand, then serve it up in the middle of the table in the pan for everyone to help themselves. It's also great if you swap the chicken for king prawns. Yummo!!
