Chicken & chorizo jambalaya

A Cajun-inspired rice pot recipe with spicy Spanish sausage, sweet peppers and tomatoes

Method

  1. Heat the oil in a large frying pan with a lid and brown the chicken for 5-8 mins until golden. Remove and set aside. Tip in the onion and cook for 3-4 mins until soft. Then add the pepper, garlic, chorizo and Cajun seasoning, and cook for 5 mins more.
  2. Stir the chicken back in with the rice, add the tomatoes and stock. Cover and simmer for 20-25 mins until the rice is tender.

Use up leftover Cajun seasoning

Cut 2 chicken breasts into strips, mix 1 tbsp of Cajun seasoning with a little oil and rub all over the chicken. Fry for 6-8 mins until golden and cooked through. Serve with guacamole, soured cream, a tub of salsa and some flour tortillas.

    There's a reason that this recipe comes top of the rankings for healthy one pot recipes. It is amazing! I used chopped tomatoes instead of plum which work perfectly well with it and wild rice which tastes absolutely amazing in it. Kept all other ingredient amounts the same. Didn't need to add more water really like others said, just made sure i put the lid on when cooking.

    A really good dish full of flavour but it did need more stock, I put closer to 500ml in it.

    Have made this several times and is always delicious. I vary the ingredients to include fish (salmon, prawns etc) although you only need to add them about 10 mins from end. One thing I have found is that the rice takes way over the 25 mins to cook and you do need a lot more liquid than is stated. Other than that this recipe is a perfect base to experiment.

    Made this recipe loads and is always delicious.I mix the ingredients using fish (salmon, prawns etc) but only add them about 10 mins from the end of cooking. You need a lot more stock than is stated and the rice seems to take way over the 25 mins stated (45mins +). Other than that this is the perfect base recipe for experimenting with ingredients etc.

    I made this exactly as the recipe stated and it turned out very dry and not a huge amount of flavour. I added loads more water but the rice just sucked it up and it didnt become moist at all. Not sure i'll make this again.

    Great recipe. I added king prawns, which went perfectly. With this amount of rice I used double the amount of stock even though I keep the pan covered. I also used half a tablespoon more Cajun seasoning, a tbsp of sugar and a splash of fish sauce. I also added chilli flakes as my hubby likes a challenge!

    This recipe has everything! It cooks in one pot, it is pretty healthy, it's a good way of introducing children to a bit of heat in their food and a food from another culture and it is delicious. It has become a staple weeknight meal for our family. I always add extra Chorizo to the pot and i like a few dashes of tabasco on my dinner :) I insist that you try this dish tonight. Go on.
