  • 1 tbsp Cajun seasoning
  • 250g long grain rice
  • 400g can plum tomato
  • 350ml chicken stock


  1. Heat the oil in a large frying pan with a lid and brown the chicken for 5-8 mins until golden. Remove and set aside. Tip in the onion and cook for 3-4 mins until soft. Then add the pepper, garlic, chorizo and Cajun seasoning, and cook for 5 mins more.

  2. Stir the chicken back in with the rice, add the tomatoes and stock. Cover and simmer for 20-25 mins until the rice is tender.

With a few changes, fry light instead of olive oil and king prawns instead of chorizo and this receipe become a zero syn meal for those of us onthe Slimming World eating plan. My daughter cooked the receipe as it is presented and loved it .Brilliant

Made a lovely change. I forgot to put the cajun spice in, but found it just as nice, and child friendly, and hubby added tabasco sauce for his serving. Big thumbs up. Also found we needed more stock.

Love this recipe ans use it over and over, much easier than the last recipe I had. Usually add in a stick of celery too. And use chopped tomatoes rather than plum. Delicious!

Made this last night and was very impressed, very tasty, shall definitely be making again. I did what others had suggested and added more water and also some celery - I also used chicken thighs instead of breasts and just cooked them longer to make sure they were done.

This is an easy great recipe that is so versatile. It's a quick tasty meal at the end of the day or great to wow your friends and family with at a dinner party. I make this a lot, and have added prawns on the odd occasion, which goes down very well. I make my own Cajun spice, only due to the fact that I always have the ingredients for the spice mixture in the store cupboard, and on adventurous days I add a couple of fresh chillies for a great kick.

cooked this tonight. fantastic, so tasty. needed to water it down a bit to get the right consistency but worked well. did it with avocado and rocket salad as suggested and complemented each other perfectly

This is absolutely delicious! I doubled the recipe to serve 8 people and it worked perfectly. I did need to add more stock like others but this wasn't a problem. My whole family loved it (which is always difficult to achieve)! FABULOUS!!!

Easy and delicious - make this regularly now. Have also chopped up in to tiny pieces all the leftover veg in the fridge and it was still excellent.

this has quickly become a household favourite and so easy! I like adding tin tomatoes with chilli already in gives it a good kick!

Tried this tonight and it went down very well. I added a good sprinkle of chilli flakes and a teaspoon of Piri Piri seasoning. We like a bit more spice in our house.
Served with some home made crusty bread. Lovely !!

Yummy! I added extra water as well and also a couple of chillies just to give it a bit of a kick. Will definitely be making again!
