Ingredients

  • 1 tbsp olive oil
  • 2 chicken breasts, chopped
  • 1 onion, diced
  • 1 red pepper, thinly sliced
  • 2 garlic cloves, crushed
  • 75g chorizo, sliced
  • 1 tbsp Cajun seasoning
  • 250g long grain rice
  • 400g can plum tomatoes
  • 350ml chicken stock

Method

  1. Heat the oil in a large frying pan with a lid and brown the chicken for 5-8 mins until golden. Remove and set aside. Tip in the onion and cook for 3-4 mins until soft. Then add the pepper, garlic, chorizo and Cajun seasoning, and cook for 5 mins more.
  2. Stir the chicken back in with the rice, add the tomatoes and stock. Cover and simmer for 20-25 mins until the rice is tender.

Delicious meal, which was a hit with my husband and friends. After reading the reviews, I used 3 chicken breasts, and added some orange pepper and green beans. It definitely needed a lot more water, probably double the quantity in the recipe.

We served it with garlic bread, and there was nothing left at the end, although everyone had eaten enough. Great recipe, and my husband is already asking me to make it again (although it would be too spicy for our 1 & 2 year-olds).

This is delicious. I made the mistake of using two full garlic heads, but i have to say it was a happy accident! I used 2 stock cubes with 400ml water. I also added mushrooms and some tomato puree. It took 30mins to cook. It went down well with my parents, who want it again at the weekend!

9/10 given in our house. I jacked up the chilli content as we like hot food and this was a simple and very tasty dish. Try it!

Loved it. I too found it needed extra water and I also added frozen peas for the last few minutes to add extra veg as part of our daily 5.

Just had this for dinner and it was delicious - used peas instead of peppers as someone else suggested. My 3 year old liked it too! Will definitely make this again.

I made this last night and it was so tasty and delicious. I could't find a cajun spice so I used a fajita mix which was just as good. Even my 3 year old ate it and enjoyed it.

Will 100% make this again, full of flavour and plentyful. I needed more stock and would prefer some more chorizo.

this is a really tasty recipe and easy to make. will definitely be making this again. i used chopped tomatoes which worked well, added peas and made my own cajun seasoning (2 tbsp salt, 1 tbsp black pepper, 1tbsp paprika, 1tbsp cayenne pepper and 1tbsp oregano). about double the amount of stock was required and i had to cook for a little longer than 25 minutes.

I had to double the water as was suggested, and next time I will probably make my own cajun spice mix instead of the bottled seasoning because I'm picky like that. But otherwise its a really good hearty recipe, especially good for a cold night as its warming and comforting. I added some cooked king prawns at the end as my family love them, I'll definately be making this recipe again

Just made this and it is absolutely scrummy! Halved the ingredients as making for two and although I didn't have cajun seasoning just added some oregano, salt, pepper, hot chilli power and paprika. Also added some celery (as suggested by others) which added a nice crunch. Would definitely make again!

Gorgeous recipe, will now appear often in this household! I used Jerk Seasoning, as didn't realise i'd ran out of Cajun and it was amazing! I added peas and celery to the recipe, and also used about 150ml more of water.

From stage 2 of the recipe i removed the dish from the hob and let it bubble away to itself in a large casserole dish for about an hour and it was perfect! Simple and easy and very, very, tasty!

Delicious! add some paprika and a little cayenne pepper for a spice kick

Agree this does need more stock/less rice, and I found the chorizo made it far too salty, so the second time I tried a "surf and turf" version, using rump steak instead of chicken and king prawns instead of chorizo (sealing the steak before removing and doing the onions, then returning it to the pan along with the prawns 5 minutes before the end of cooking) - yum!!

The first time i cooked this i used a more expensive chorizo whereas the second time i used a cheaper diced one and noticed a big difference. I'd recommend shelling out a couple more quid on good chorizo. Also this recipe...amazing.

Absolutley delicious. As has been mentioned the dish does require more stock. I use 650ml insted and it was fine.
