Chicken & chorizo jambalaya

A Cajun-inspired rice pot recipe with spicy Spanish sausage, sweet peppers and tomatoes

Method

  1. Heat the oil in a large frying pan with a lid and brown the chicken for 5-8 mins until golden. Remove and set aside. Tip in the onion and cook for 3-4 mins until soft. Then add the pepper, garlic, chorizo and Cajun seasoning, and cook for 5 mins more.
  2. Stir the chicken back in with the rice, add the tomatoes and stock. Cover and simmer for 20-25 mins until the rice is tender.

Use up leftover Cajun seasoning

Cut 2 chicken breasts into strips, mix 1 tbsp of Cajun seasoning with a little oil and rub all over the chicken. Fry for 6-8 mins until golden and cooked through. Serve with guacamole, soured cream, a tub of salsa and some flour tortillas.

    we made this when the magazine arrived and it was lovely the only thing we found is that we needed to add alot more water then it said it needed but was very tasty we also use left over roast chicken

    Although I didn't have cajun seasoning (I used only cayenne pepper) and I burnt it a little, my boyfriend insisted in giving 5 point :)

    i loved it ,,my family don't like peppers so i added peas instead,,my hubby and kids found it a bit spicy ,,so next time i will research a cajun spice mix and make sure it isn't so spicy

    Very tasty and easy to prepare. The cajun spice gives it a real 'sunshine' flavour, but without making it overly spicy. My fiance loved it too, although he insisted on adding tobasco sauce to his portion (Delia's version recommends this). On my quest for a good jambalaya recipe, I saw that some versions recommend adding celery at the beginning stage, so I might try this next time to boost the veg content...But a winner nonetheless:)

    I love this recipe. I agree that it needs a bit more stock than stated (and I add a bit more chorizo and garlic for personal taste)but otherwise it is easy to prepare and cook. It is filling as well as healthy so it is good all round dish.

    Yum yum yum! Yes it does need a bit of extra stock, although I imagine you wouldn't if you had a lid for your frying pan which I don't. Lovely and rich, little bit of warmth, filling and very easy to make. Going on the regular list!

    This was so easy to make and went down a storm. I will add more chorizo next time as we really like it and perhaps a little more water. Great recipe.

    simple and easy to make, my boyfriend loved it. i may not cook the chicken for so long at the beginning, as it was a little dry, but i feel this is going to be a regular favourite

    I have just had this for dinner and it was lovely!!! i added mushrooms and a sweet pepper instead of the regular pepper, i will definately make this alot!
