Salmon with greens & crème fraîche

Simple and super quick, this lovely salmon dish tastes as good as it looks

Method

  1. Heat the oil in a large, deep frying pan with a lid. Cook the leek for 5-10 mins until soft but not coloured, then pour in the stock. Simmer for a few mins until reduced slightly then add the crème fraîche and season. Cook for 1 min more.
  2. Tip in the peas and beans, nestle in the salmon fillets, then turn down to a simmer and cover. Cook for 12-15 mins, depending on the thickness of the salmon, until cooked through. Sprinkle on the chives and serve with mashed potato, if you like.

Chicken with greens & tarragon for 4

Swap the salmon fillets for 4 skinless chicken breasts. Allow 25-30 mins cooking time for the chicken, and stir in the broad beans and peas with 2 tbsp chopped tarragon for the final 10 mins of cooking time.

    This is a nice wholesome meal, which it really easy to make, and I had no problems with it. It might seem a bit plain to some, but I really enjoyed it.

    This was nice, but Peas dont take 12 mins to cook and had gone a bit past their best by time the salmon was cooked. No broadbeans in my house so added green beans instead. Really good freezer stqnd by meal for whole family.

    Used sugarsnaps instead of broadbeans and added a little grated lemonrind to the sauce - turned out great! Rice instead of mash went down well w the kids.

    This made a really nice dinner. I tweaked it a bit though. As we are not fond of broad beans, I stirred some cooked carrots in at the end. Also, I couldn't get hold of chives so used parsley instead. Was very good. Served with mashed potato.

    This was a quick and delicious summery mid week meal. Served with mini new potatoes and sweetcorn. Will try with mash next time as I will definitely be making this again

    Loved it. Make sure it is adequately seasoned. Followed suggestion above and added parsley. Creamy and salmon tasting. Not at all bland like mentioned above.

    A great mid week meal. The salmon was very moist and the sauce had plenty of flavour. I used peas and sliced green beans as I don't like broad beans, added them 5 minutes from the end of cooking time. Will make again.
