Spanish rice & prawn one-pot

Method

  1. Boil the kettle. In a non-stick frying or shallow pan with a lid, fry the onion, peppers, chorizo and garlic in the oil over a high heat for 3 mins. Stir in the rice and chopped tomatoes with 500ml boiling water, cover, then cook over a high heat for 12 mins.
  2. Uncover, then stir - the rice should be almost tender. Stir in the prawns, with a splash more water if the rice is looking dry, then cook for another min until the prawns are just pink and rice tender.

TIP

If you don't want to spend time at the stove you can bake this dish in the oven. Tip the onion, peppers, chorizo, garlic and oil into an ovenproof dish, then bake for 15 mins at 200C/180C fan/ gas 6. Stir in rice, tomatoes and water, cover, then bake for another 20 mins, stirring in prawns for the final 2 mins.

    This was a big hit with everyone. I added chicken stock cube a pinch of saffron and half teaspoon of smoked paprika. I cooked on the stove but had to keep adding water as it was drying out quickly you couldnt walk away and leave it. It is quick easy healthy tasty a great midweek winner!!

    Really tasty and very easy to make! Perfect for anyone adverse to washing up as i made it all in one pyrex dish in the oven.... great. Make sure the rice is completely submerged in the liquid as I had some undercooked rice on top... a quick stir mid-cook stops this as well.

    Used stock and wine instead of water and used the oven method which took about ten minutes longer than the recipe said. The dish was lovely,easy to make too so will definately make again.

    Made this in the oven... you have to make sure the rice is totally covered with liquid... my dish was slightly too small and some of the rice didn't cook properly. Would definitely make again!!

    Really simple yummy recipe to through together. Left out the chorizo and replaced with black olives (dont eat meat). Also added small amount of chilli powder to give it a little kick.

    This is a brilliant recipe. I did (as suggested by some of the adobe people) add chicken stock, 75 gm of chorizo instead of 50 gm. I also put in chilli flakes since I like spicy food. Other than that, it came out brilliant!

    Cooked this meal tonight, but added chicken stock cube and saffron strands to the water and also some smoked paprika and it was absolutely delicious - will definitely be making this again! Very easy to prepare and cook as well.

    Made this recipe using the oven version, easy to make, I added two chicken breasts and king prawns as they were the only uncooked prawns I could get. I agree it was a little bland, next time I would finely chop the onion, add more chorizo and use a stock cube.

    I made this last night and was impressed. I made it on the hob and will definitely make again although I will take the advice of other posts and use chicken stock and perhaps paprika or chilli just to give it a kick, but it's a new midweek favourite to be served with garlic bread and vino!

    This was quite tasty. I can see how people said it was bland if they didn't adjust the recipe. I added 500ml of chicken stock rather than water, 1 red chilli and some paprika. Not a party pleaser but definitely worth knocking out on a week night... cheap and easy.

    Really loved this dish, used water but would use chicken stock next time. Added a little smoked paprika, white wine and just a few chopped red jalapenos. Yum!
