Spanish rice & prawn one-pot

Method

  1. Boil the kettle. In a non-stick frying or shallow pan with a lid, fry the onion, peppers, chorizo and garlic in the oil over a high heat for 3 mins. Stir in the rice and chopped tomatoes with 500ml boiling water, cover, then cook over a high heat for 12 mins.
  2. Uncover, then stir - the rice should be almost tender. Stir in the prawns, with a splash more water if the rice is looking dry, then cook for another min until the prawns are just pink and rice tender.

TIP

If you don't want to spend time at the stove you can bake this dish in the oven. Tip the onion, peppers, chorizo, garlic and oil into an ovenproof dish, then bake for 15 mins at 200C/180C fan/ gas 6. Stir in rice, tomatoes and water, cover, then bake for another 20 mins, stirring in prawns for the final 2 mins.

    Really tasty. I used brown rice which took an age to cook and also added chicken and a chilli (I like it spicy). Would definitely cook again, a great family meal.

    Thought this recipe was "ok". Needed more flavour though. Perhaps add some Paprika and also use Chicken stock in the future.

    I used chicken stock and also added some smoked paprika and still though it lacked depth of flavour. The recipe says to cook on a high heat - it stuck to the pan ! I think a gentle simmer would be better

    Yummy! I cooked this for the 'in-laws' and they were very impressed. I added paprika to give it more of a kick and bring out the flavour of the chorizo. Very quick and easy to make, will defo do it again and again!

    cooked this for my housemates tonight and took into account some people saying it was bland.... I followed the recipe but I added in 100g of very spicy chorizo and a couple of chicken fillets along with some paprika, about half tsp of chili flakes and added a veg stock cube to the water! DEEEELISH. All plates were cleaned!

    this was really scrummy, as advised in some comments i used 500ml of chcken stock instead of just water.i aslo added about 1 tsp smoked paprika and i didn't have any prawns so i just used extra chorizo. at the end i added fresh coriander and a squeeze of lemon. in total it only took 30mins from start to plate, i will definately make this again and again. with regards to the 'bland' comments i think you need to use a good quality chorizo, i always use lidls which is really full of flavour.

    Good midweek family meal. I also added a stock cube and good quality chorizo. Found 50ml of water was not enough, and added a further 250ml so tha the rice was cooked. Next time may add some red chillis for a kick!
