Spanish rice & prawn one-pot

Method

  1. Boil the kettle. In a non-stick frying or shallow pan with a lid, fry the onion, peppers, chorizo and garlic in the oil over a high heat for 3 mins. Stir in the rice and chopped tomatoes with 500ml boiling water, cover, then cook over a high heat for 12 mins.
  2. Uncover, then stir - the rice should be almost tender. Stir in the prawns, with a splash more water if the rice is looking dry, then cook for another min until the prawns are just pink and rice tender.

TIP

If you don't want to spend time at the stove you can bake this dish in the oven. Tip the onion, peppers, chorizo, garlic and oil into an ovenproof dish, then bake for 15 mins at 200C/180C fan/ gas 6. Stir in rice, tomatoes and water, cover, then bake for another 20 mins, stirring in prawns for the final 2 mins.

    This dish was absolutely delicious. It was super tasty and we couldn't believe how quick and simple it was. We added some chicken stock instead of water to add a little extra flavour which worked perfectly. We followed the hob version. I will be making again and again. Will try with brown rice time instead of white to make it a little healthier.

    I've cooked a lot of recipes from the BBC Good Food site and magazine and this is the first big disappointment - very, very bland and I won't be repeating it. I wish I'd thought to use stock instead of water, that might have helped but even adding a large dollop of soy sauce at the very end didn't help. What a shame!

    I've made this loads of times, it's so easy and really tasty although you definitely need to add salt. I put the cooked frozen prawns in right at the end and then just heat through.

    It's boring and bland. Little bit of salt, chilly, lemon juice, pepper, maybe even tinny bit of sugar. Only then we have flavour. I often make it, but add courgette, cook rice separately and then serve covered with delicious tomato-vegi souse. It has to have a flavour, spicy is good.

    Yummy recipe.... added some turkey breast diced and used 2 x chicken oxo and some paprika in the water for the rice and all my family loved it. I served it with some crusty bread which mopped up the juices ! Will definitely do this recipe again and again.

    Made this and enjoyed it. I like spicy food, so added half a red chilli and a splash of hot sauce. However, I felt something was still missing. I would make this agin, but think next time I will use a chicken stock cube.

    I like my food spicy so I finely shredded a single Jalapeno chilli into the mix to warm it up and a pinch of saffron just because I love saffron. I have also added mussels and some flakes of smoked mackerel over the top just before serving. It's a very versatile dish and I really enjoy putting a large dish out at barbecues, always goes down well. I am using some crabs legs this week and have acquired some langoustines to really posh it up! Can't wait.

    This was lovely, could do with a bit of extra spice or something added into it though! I added extra chorizo because it didn't seem enough, but all in all it's a simple recipe that takes hardly any time to cook!

    Nice idea, but there was no taste to it unfortunately. Had to modify it by adding a bit of fish sauce and chillies, but it didn't really help. Disappointed :(

    I made this last week and absolutely loved it, i just used stock instead of water and added lots of garlic. Am making it again this week, so simple and tasty, had one portion one night and the rest for lunch the next day cold. Yummy!!!

    We really loved this recipe - I used veg stock (400ml with 2 stock cubes) and white wine (100ml) instead of water, 1 fresh chilli, some turmeric and paprika - think I overdid the stock cubes though as it was a bit salty. Used brown rice too, so it took forever, would probably used the microwave kind in the future!

    This is a quick alternative to paella, however, to make it more tasty I used chicken stock and add 2 tsp of hot chilli powder and 1 tsp of paprika. Will definitely make again.
