Spanish rice & prawn one-pot

Method

  1. Boil the kettle. In a non-stick frying or shallow pan with a lid, fry the onion, peppers, chorizo and garlic in the oil over a high heat for 3 mins. Stir in the rice and chopped tomatoes with 500ml boiling water, cover, then cook over a high heat for 12 mins.
  2. Uncover, then stir - the rice should be almost tender. Stir in the prawns, with a splash more water if the rice is looking dry, then cook for another min until the prawns are just pink and rice tender.

TIP

If you don't want to spend time at the stove you can bake this dish in the oven. Tip the onion, peppers, chorizo, garlic and oil into an ovenproof dish, then bake for 15 mins at 200C/180C fan/ gas 6. Stir in rice, tomatoes and water, cover, then bake for another 20 mins, stirring in prawns for the final 2 mins.

    Fantastic! This is one of the easiest full meals that I've ever made. Very little mess, very little preparation and very tasty! I added chili flakes and a little demerara sugar to the dish. Very tasty.

    I am so surprised by people saying this is really tasty....however it absolutely was after adding a lot of other ingredients. Chicken stock and tomato puree for one. Definitely a fav now, but needs a bit more adding to!

    Pretty good. Used a Knorr stockpot rather than water, and added green beans instead of green pepper. Did in the oven but took longer cooking time and a little more water.

    I used proper paella rice instead of basmati, chicken stock instead of water and mixed seafood instead of just prawns. I also chucked some black olives and peas in just before serving. It went down really well with the kids as well as my other half and has been requested again.

    I loved this dish! So easy to make and absolutely delicious. If there are just two of you make it for four and either freeze the rest or have it for lunch the next day. Top notch!

    Tasty and filling. I made this in the oven which made it a really simple meal in our busy family! I added a chicken stock cube and a teaspoon of cajun spices. The flavour from the chorizo was delicious. We will be having this again!

    Great recipe if you tweak it a bit to suit your taste. I liked the idea of this recipe but it did seem a bit bland. So I used chicken stock, added paprika and saffron, some cooked chicken pieces along with the prawns and some peas. Was delicious - husband and kids enjoyed it too!

    I love this recipe! made it a few times now and made it for the boyfriend and he keeps requesting it! I added a few chillis to give it a nice kick and added a chicken stock cube. Fantastic!

    This recipe is lovely. I made a few alterations such as using chicken stock rather than water and arborio rice rather than long grain. I also added extra chorizo, replaced the prawns with chicken, and used chipotle chilis to add heat and smokey flavour. It was seriously delicious. I will definitely be making this again.

    I found this tasty but lacking a little something. I would definitely eat it again as its a great low fat recipe. I would add chopped chilli and perhaps some paprika next time. I would also use chicken or veg stock as it tasted a bit watery. I used cooked chicken instead of prawns.
