Spaghetti with sardines

Method

  1. Cook the spaghetti in a large pan of boiling salted water according to pack instructions. Meanwhile, make the sauce. Heat the oil in a medium pan and cook the garlic for 1 min. Add the chilli flakes, tomatoes and sardines, breaking up roughly with a wooden spoon. Heat for 2-3 mins, then stir in the olives, capers and most of the parsley. Mix well to combine.
  2. Drain the pasta, reserving a couple of tbsp of the water. Add the pasta to the sauce and mix well, adding the reserved water if the sauce is a little thick. Divide between 4 bowls and sprinkle with the remaining parsley.

Tip

Using skinless and boneless sardines in this dish make a great sustainable alternative to anchovies - they're also cheaper and a great source of omega-3.

    I don't know why but this recipe didn't really work for me. The sauce is lovely and I usually love sardines but, personally, I didn't think they combined well. I have made it again but with prawns instead which I much preferred.

    Excellent! When I first made this I didn't have any tinned sardines but I did have tinned mackerel in a hot spicy sauce. This which works just as well especially if you love big flavours.

    Very nice midweek dish. I cooked for two but kept the amounts for the sauce as per the recipe which serves 4. We didn't have much sauce left. Keep it in mind if you do cook for 4.

    Good, left out the olives as we aren't keen on black olives Sauce wouldn't be enough for 4 servings. Definitely one to make again and so quick, easy and economical.

    Cheap and tasty, so a winner for me. Also had leftovers the next day which I had with rocket for lunch. I understand that capers and olives are an aquired taste for some, but we love them in our house!:)

    Really quick and easy to make. I would say to use a 400g tin of tomatoes as it would be too dry otherwise. Next time I make this, I am going to try it with smoked mackerel.

    Ok, but not great. Didn't really work for us, and we both don't mind sardines... Will probably not make again. Will have to try another way of eating sardines! In a creamy potato gratin is the favourite so far (using sardines in oil).
