Little jam tarts

Method

  1. Roll out the shortcrust pastry on a lightly floured surface to just under the thickness of £1 coin. Stamp out 20 x 5cm circles using a pastry cutter and line 2 mini muffin tins (or make in 2 batches).
  2. Prick with a fork and spoon 1 tsp jam into each (we used apricot, blackcurrant and strawberry). Stamp out shapes from the leftover pastry to decorate the tarts, if you like.
  3. Bake at 200C/180C fan/gas 6 for 12-15 mins, until the pastry is golden.

    I made these as part of my 'British theme' for the Royal Wedding - they were delicious and were the first to disappear! I am making ore now for an afternoon tea - they are so easy the whip up quickly!

    strawberry jam and lemon curd tarts with stars on top for christmas, quick, easy and lovely, we like tarts better with a bit of something on top :)

    Made today withmeyer 2 year old and 4 year old. It was very easy for them to do and they loved it. The tarts were very tasty.
