Bun & butter pudding

Like classic bread and butter pudding? Try this twist that uses hot cross buns instead

Method

  1. Heat oven to 170C/150C fan/gas 3. Warm the cream and milk in a pan over a gentle heat. Whisk the eggs, sugar and vanilla together with a fork in a large bowl, then gradually add the warm cream mixture.
  2. Halve the buns and spread with the butter. Arrange in a large shallow ovenproof dish (approx 25 x 32cm), dot with the marzipan and brush the marmalade on top.
  3. Pour over the cream mixture and set aside to soak for 15 mins. Press the buns down into the custard mixture as they soften.
  4. Bake for 50 mins until set, then remove and allow to stand for 10 mins. Dust lightly with icing sugar and serve while still warm.

You can make this pud a day ahead. Warm it gently in the just-turned-off oven covered with foil, while you eat your Sunday roast.

    This is a lovely idea to use up left over hot crossbuns. I didn't add the marzipan as I'm not a fan of it, but threw in some dried cranberries instead. Also: only glazed with marmalade after it had come out of the oven as I think it would've burnt otherwise. (as it was, mine came out much more golden than the picture; but I think that was a good thing!) Served it with whipped cream and it was gorgeous.

    I have made this twice so far, and was delicious both times, even reheated the next day was lovely. Was easy to make, and a great way to use up extra hot cross buns. The second time I made it I added extra marzipan because I like it. It rises lots in the oven, but then sinks down a bit when you take it out. Delicious and highly reccomended.

    Absolutely delicious and very easy to make. Went down a treat for Easter lunch. Tried the tip of "gently warming in the just turned off oven", unfortunately it didn't work for me...was still cold!

    Made this as an Easter Pudding, was really nice, I left out the marzipan as a personal preference. Everyone really impressed, even the kids ate it after all that Chocolate! Definitely a real treat!

    For an adult treat, add a egg cup of amaretto to the milk before adding to the buns. Delicious with custard.

    Lovely recipe but I tried it again with all butter croisants cut through and layered with a few sultanas.It gives it a nice taste plus you don't need all that butter. Really lovely comfort food!

    Lovely Easter treat. Next time I will use less sugar in the egg/cream/milk mix because the marzipan and marmalade give plenty of sweetness. It looks gorgeous and tastes delicious too.

    Absolutely delicious! I had some stale hot cross buns which were perfect for this... I added cinnamon and nutmeg to the egg and cream mixture, didn't use marzipan and used ordinary caster sugar and it was divine! Would seriously recommend!

    Delicious and easy to make. A great twist on bread and butter pudding and went down a storm for pudding on Easter day. I just need an excuse to make it again now. Lovely.

    Made this for an Easter Day lunch and guests were wowed by it, most coming back for seconds! It looked and tasted wonderful! I only put in 75g of sugar and it was quite sweet enough. It was cooked in 45 minutes.

    I made this for our Easter meal. Absolutely delicious.A very quick and easy, but special pud. Everyone from 18 months to 70 loved it. The quantities are generous so plenty enough for everyone to have seconds!! I found it hard to spread the marmalade on the top so just heated it with a tablespoon of water first. We will be having this again...I can see it becoming a family favourite.
