Method

  1. Whizz the chicken and garlic in a processor until the chicken is minced. Tip in the bacon, sundried tomatoes and basil. Pulse for 5 secs to just mix through. Season well.
  2. Roll the pastry sheet on a lightly floured surface and cut in half lengthways. Spread half the chicken mixture along the middle of one of the pastry strips, then roll up the pastry, pinching the ends together to seal. Using a sharp knife, cut into 2.5cm long pieces. Repeat with the remaining pastry strip. Can be frozen, uncooked, for up to 1 month.
  3. Heat oven to 200C/180C fan/gas 6. Place the rolls on a large baking sheet. Brush with the egg, then sprinkle with seeds. Bake for 20 mins until golden.

These are lovely, i used tomato puree instead of sundried and dropped in a couple of mushrooms too (can't have anything without mushrooms!) and they went down a treat! Will make again.

Use oven-dried or oven roasted tomatoes instead of sun-dried - in any recipe. Most chefs do. Keep them in oil same as sun-dried.

I had to use turkey mince, because I don't have a food processor and I couldn't find chicken mince. I cooked half the batch and froze the rest. The batch i cooked from frozen actually tasted slightly better, maybe because they had longer in the oven? Boyfriend and friends said they were the best sausage rolls they had ever had!

ms1847 I think the chicken is raw, that's what I did anyway. I think it would be too dry to start off with cooked chicken.

Have made these again and again. The chicken should be raw. I used dried tomatoes which I can buy from my market. They are marinated with garlic and italian herbs. The family loves them and they freeze really well. I haven't got a food processor but used a blender.

Thhe first time I made these they were beautiful but perhaps a little dry. Second time I tried adding a sauce inside but the chicken still absorbed it all! was lovely though and one i will keep making forever!

These little summer rolls were a delight on our Good Friday "walk and picnic" with friends. I am not a big fan of sundried tomatoes so I replaced these with chargrilled red peppers in oil - irresistible!!

These are so easy and absolutely delicious! Not usually a fan of sausage rolls but these are special. Instead of sundried tomatoes I used a little tomato paste, just right.
