A "Quick" Beef Stroganoff

Method

  1. Place the flour and paprika in a medium sized bowl, and season with salt and pepper. Slice the steak into finger sized pieces, and then coat them in the flour all over.
  2. Heat the oil in a large frying pan or wok, and fry the white onion until translucent (5 mins) then add the floured steak slices to the onions, and fry for a further five to seven minutes (you may need to add a little more oil), don't worry about bits sticking to the frying pan, they will loosen those up later. NOTE: If you like your meat well cooked cook for ten minutes .
  3. Add the mushrooms and the red pepper slices and fry for a further few minutes.
  4. Prepare the beef stock and add water to about 250 ml, and then add to the steak and vegetables, add the white wine vinegar, check the seasoning and leave to cook on a low heat for a further 20 mins .
  5. Finally add the soured cream, and stir into the stroganoff to taste. If you overdo the vinegar, just add a little brown sugar to neutralise.
  6. Serve with roast potatoes and enjoy

    This recipe sounds lovely and I'm gonna have a go at it soon. I once watched Rick Stein do a traditional version and it went like this: Fry sliced or wedged Onions and mushrooms with a good teaspoon of paprika (smoked gives a stronger flavour) once softened transfer to a plate then in the same pan fry some strips of very good quality steak (I use rib eye cause it's my favourite) once that is cooked to your preference turn the heat right down add the mushrooms and onions back in and stir in a tub of sour cream. Serve with rice. I find this a great quick recipe for a mid-week treat and it takes no time at all to prepare.

    I never use vinegar; the best way to give a bit sour taste is to use a couple of marinated gherkins or pickles. Slice & dice them, fry with beef and onions....etc, add some sour cream, spices and simmer.

    Crappest website ever arranging comments in date order from the earliest to the latest and giving you NO options. Who designed this site? The moron who originally designed it back in 2005/6/7 Terrible. Crap like this makes me wonder exactly why I am paying my licence fee seeing that I NEVER watch anything live. Hmmm

  • 500 g rump steak
  • 2 tbsp, plain flour
  • 2 tbsp, paprika
  • salt & pepper
